Description
Formerly a dairy farm, Ferme des Souins has been transformed by the arrival of Mathias, a passionate young winemaker.
The landscape has been enriched by rows of vines climbing the slope and stiles lining the terraces with their low dry-stone walls. Rouge du Roussillon ewes and their lambs have replaced Lacaune ewes, which were milked morning and night to make cheese and yoghurt.
Part of the building housing the sheepfold has been converted into a winery for wine-making and maturing.
Traditionally in Provence, sheep would graze in the vineyard on their return from transhumance. The symbiosis of viticulture and sheep rearing encourages the development of a richer, more varied ecosystem, reduces the need for weeding between rows and provides an organic contribution. Agropastoralism meets today's environmental challenges.
